  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn, drained
  • 1 cup cherry tomatoes halved (optional)
  • 1 bell pepper diced (optional)
  • ½ red onion finely diced (optional)
  • ¾ –1 cup Italian dressing
  • 1 tbsp lime juice optional, for extra flavor
  • ½ tsp chili powder optional
  • ¼ tsp cumin optional
  • Salt and pepper to taste
Optional Add-Ins (add before serving):
  • 1 avocado diced
  • ¼ cup fresh cilantro chopped
  • ½ cup shredded cheddar cheese

Method

  1. Cook pasta according to package directions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine cooked pasta, black beans, corn, tomatoes, bell pepper, and onion.
  3. Pour Italian dressing over the mixture.
  4. Add lime juice, chili powder, cumin, salt, and pepper (if using).
  5. Stir until everything is well coated.
  6. Cover and chill for at least 30 minutes (optional but recommended).
  7. Add avocado, cilantro, or cheese just before serving, if desired.
